This salad uses ingredients that you likely have in your fridge and pantry and elevates them into something slightly unexpected. Sweet green peas are balanced with a tangy lemon vinaigrette, salty feta and the freshness of mint. A sprinkle of pistachios provides a bit of crunch. Ingredients for Pea Salad
- peas, fresh or frozen
- lemon juice
- olive oil
- dijon mustard
- kosher salt
- black pepper
- fresh mint, chopped
- crumbled feta cheese
- pistaschios
Cooking Tips
- You can use either fresh or frozen peas for this recipe
- If you can find them fresh pea shoots would be a delicious garnish
- I’ve included a recipe for a simple vinaigrette but you can also use your favorite dressing. This would be delicious with my Lemon Thyme Vinaigrette, Maple Dijon Vinaigrette or my Basil Vinaigrette.
- Substitute sliced almonds or sunflower seeds for the pistachios
How to Make Pea Salad with Mint and Feta

Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to a bowl of cold water ( or an ice bath) to stop the cooking. In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper (Alternately you can place all the ingredients in a small mason jar and shake until well combined). Transfer the peas to a large bowl and add the mint,crumbled feta and pistaschios. Drizzle the dressing over the salad and toss to combine. Sprinkle with additional pitaschios and serve as desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.

Pea Salad with Mint and Feta
Equipment
- 1 medium saucepan
- 1 large bowl
Ingredients
- 2 cups peas fresh or frozen
- 1/2 cup fresh mint, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup pistachios
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 tablespoon dijon mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
