Loaded with herbs, garden fresh veggies and drizzled with a lemon vinaigrette this white bean salad is light, healthy and delicious. This Mediterranean white bean salad has a lot going for it. White beans are creamy and high in fiber, while a variety of fresh veggies and herbs bring flavor and texture. Kalamata olives and crumble feta add yet another layer of depth. This salad can serve as a stand alone lunch, a side dish for chicken or fish and is a great option for potlucks and summer barbecues. Ingredients for Mediterranean White Bean Salad

  • White beans such as cannellini or navy beans
  • English cucumber
  • Cherry or grape tomatoes
  • Italian flat leaf parsley
  • Kalamata olives
  • Feta Cheese
  • Lemon, juice and zest
  • Olive oil
  • Red pepper flakes
  • Dried oregano
  • Salt
  • Pepper

How to Make Mediterranean White Bean Salad

Consider this recipe as more of a template, as it’s highly customizable to what you like or have on hand. Feel free to use navy beans or chickpeas in place of cannellini beans; basil instead of parsley or goat cheese instead of feta. This is an easy salad you can really make your own.

Mediterranean White Bean Salad

To make the dressing whisk together lemon juice, olive oil, herbs, salt and peppers until combined. To assemble the salad add the white beans, tomatoes, cucumber, parsley, olives and feta in a large bowl. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate to allow the flavors to meld.

Ingredients
  

For the dressing

  • 1 large lemon, zest and juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 tsp ground black pepper
  • 1/4 tsp kosher salt

For the salad

  • 2 15 oz cans cannellini beans drained and rinsed
  • 1 English cucumber diced
  • 10 oz grape or cherry tomatoes halved
  • 1/3 cup kalamata olives pitted and chopped
  • 1 cup flat leaf parsley chopped
  • 1/2 cup feta cheese, crumbled

Instructions
 

To make the dressing

To make the salad

  • In a large bowl add white beans, tomatoes, cucumber, parsley, olives and feta. Drizzle the dressing over the salad and toss to combine. Serve immediately or refrigerate to allow the flavors to meld.

Notes

You can use navy beans, or chickpeas in place of the cannellini beans.

    Great combination of ingredients. Healthy and satisfying. My 9 y/o enjoyed too as long as her portion didn’t have the olives. Used fat free feta and still tasted great!
