Summer is salad season, especially when that salad features bright, juicy strawberries. Earthy spinach, sweet berries and a homemade balsamic viniagrette come together to make a delicious salad perfect for lunch or a light dinner. My recipe for Spinach and Strawberry Salad is healthy, tasty and easy to make.

Spinach and Strawberry Salad

This salad is one of the best ways to highlight fresh summer strawberries. Sliced berries are set atop a bed of baby spinach and creamy goat cheese. Creamy goat cheese, cruchy pecans and a tangy honey balsamic vinagrette tie everything together for a salad that celebrates the bounty of the season. Spinach and Strawberry Salad

Ingredients

  • Baby spinach leaves
  • Fresh strawberries, sliced
  • Goat cheese, crumbled
  • Pecans

For the Honey Balsamic Dressing

  • Balsamic vinegar
  • Honey
  • Dijon mustard
  • Kosher salt
  • Ground black pepper
  • Olive oil

How to Make Spinach and Strawberry Salad

Spinach and Strawberry Salad

Place the spinach in a large bowl or on a platter. Arrange the sliced strawberries and goat cheese on top of the spinach.

Prepare the dressing. Add the balsamic vinegar, honey dijon mustard,, salt , black pepper and olive oil to a mason jar and shake well to combine. Set the dressing aside while you prepare the rest of the salad. Alternatively you can add thebalsamic vinegar, honey dijon mustard, salt , black pepper to a small bowl and whisk in the the olive oil until well combined.

Drizzle the dressing over the salad and top with pecans. Serve as desired.

Serving Suggestions

This salad is perfect on it’s own as a light lunch or dinner or you can make it a bit more filling with the addition chicken or shrimp. This salad would also be a lovely side dish for my Garlic Herb Lamb Chops, Pesto Tagliatelle , or Pan Roasted Chicken Thighs with Mushrooms .
