Equipment

  • 1 medium saucepan
  • 1 large bowl

Ingredients
  

  • 2 cups peas fresh or frozen
  • 1/2 cup fresh mint, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pistachios
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to an ice bath to stop the cooking.
  • In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper. Alternately ou can add all of the dressing ingredients to a small mason jar and shake until combined.
  • Transfer the peas to a large bowl and add the,mint, feta cheese and pistachios. Drizzle the dressing over the salad and toss to combine. Sprinkle with pistachios and serve as desired.
