This fresh pea salad with mint and feta is a quick and easy spring side dish made with sweet peas, fresh herbs, and a bright lemon dressing. Perfect for Easter, brunch, or summer meals, this healthy pea salad is light, flavorful, and ready in minutes.
Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to an ice bath to stop the cooking.
In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper. Alternately ou can add all of the dressing ingredients to a small mason jar and shake until combined.
Transfer the peas to a large bowl and add the,mint, feta cheese and pistachios. Drizzle the dressing over the salad and toss to combine. Sprinkle with pistachios and serve as desired.
