Simple and elegant, the Lavender French 75 is the perfect champagne cocktail for spring and summer. Floral and bubbly, this easy cocktail is perfect for weekend brunches and special occasions. Whether you’re making a single drink or a pitcher this Lavender French 75 is easy to make and brings a floral twist to any party.

The French 75 is a classic cocktail consisting of gin, lemon juice, simple syrup and champagne (if you’re not a fan of gin you can also substitute an equal amount of vodka). Equat parts sweet, tart and bubbly this drink gets even better with the addition of floral lavender. While you can use a bottle store-bought lavender syrup I highly recommend using homemade lavender simple syrup, and I’ve included a instructions on how to make it! If you have leftover lavender syrup you can use it to make a lavender Tom Collins, lavender lemonade or sweeten your morning cup of coffee or tea. You can also use any remaining dried lavender for my Lemon Lavender Sable Cookies.

Ingredients

For the lavender simple syrup

  • Granulated sugar
  • Water
  • Dried culinary lavender buds

For the French 75

  • Gin
  • Lavender simple syrup
  • Lemon juice
  • Prosecco
Lavender French 75

How to Make a Lavender French 75

Start by making a batch of lavender simple syrup. In a small saucepan combine sugar, water and lavender and bring to a boil making sure the sugar fully dissolves. Remove the pan from the heat and cover, allowing the simple syrup to steep for 20-30 minutes. Strain out the lavender buds and transfer the simple syrup to a clean glass jar.

To make a single drink add the gin, lavender simple syrup and lemon juice to a cocktail shaker with ice. Shake for 15 seconds or until chilled, pour into a champagne flute or cocktail glass. Top with prosecco, garnish with a lemon twist and and serve as desired.

For a large batch of drinks add the gin, lavender simple syrup and lemon juice to a pitcher with ice and stir to combine. Add in prosecco and serve as desired.

For a single drink

  • 1.5 oz gin
  • 1 oz lavender simple syrup
  • 3/4 oz lemon juice
  • 3 oz Prosecco

For a pitcher

  • 1.5 cups gin
  • 1 cup lavender simple syrup
  • 3/4 cup lemon juice
  • 2.5 cups prosecco

Instructions
 

For the lavender simple syrup
