Ingredients
  

For the lavender simple syrup

  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup dried culinary lavender buds

For a single drink

  • 1.5 oz gin
  • 1 oz lavender simple syrup
  • 3/4 oz lemon juice
  • 3 oz Prosecco

For a pitcher

  • 1.5 cups gin
  • 1 cup lavender simple syrup
  • 3/4 cup lemon juice
  • 2.5 cups prosecco

Instructions
 

For the lavender simple syrup

  • In a small saucepan combine sugar, water and lavender and bring to a boil making sure the sugar fully dissolves. Remove the pan from the heat and cover, allowing the simple syrup to steep for 20-30 minutes. Strain out the lavender buds and transfer the simple syrup to a clean glass jar .

For a single drink

  • Add the gin, lavender simple syrup and lemon juice to a cocktail shaker with ice. Shake for 15 seconds or until chilled, pour into a campagne flute or cocktail glass. Top with prosecco , garnish with a twist of lemon zest and serve as desired.

For a pitcher

  • Add the gin, lavender simple syrup and lemon juice to a pitcher and stir to combine. Add in prosecco and serve as desired.
