You can never have too many quick chicken recipes for those busy weeknights. Using just a handful of ingredients this chicken bakes up tender and juicy in a savory-sweet sauce that is ready in 30 minutes. My Easy Baked Apricot Chicken is a quick and simple dinner your’re sure to love.

Easy Baked Apricot Chicken

This chicken recipe couldn’t be easier and is bound to get a spot in your regular dinner rotation (for a holiday dinner take a look at my Apricot Glazed Ham!). Equal parts sweet and savory all you need is apricot preserves, soy sauce for umami and dijon mustard and fresh ginger for a little bite.You can whisk the sauce together right in the baking dish in just a few minutes and then let the chicken bake up tender and juicy while you prepare your side dishes ( check out my Balsamic Maple Roasted Brussels Sprouts, Easy Roasted Delicata Squash or Dijon Mustard Roasted Asparagus.

Ingredients

  • chicken breasts
  • apricot preserves
  • soy sauce
  • dijon mustard
  • grated fresh ginger
  • kosher salt
  • ground black pepper

How to Make Baked Apricot Chicken

Easy Baked Apricot Chicken

This chicken comes together in a snap. Preheat the oven to 400 ℉ and whisk together apricot preserves, soy sauce, dijon mustard, ginger, salt and pepper in a mixing bowl until fully combined. Pour the mixture into a baking dish (alternatively you can whisk everything together in the baking dish which is what I typically do). Add the chicken breasts to the baking dish ensuring they are thoroughly coated by the apricot mixture. Bake for 25 minutes or until the chicken reaches an internal temperature of 165 ℉ with a meat thermometer. Serve over jasmine rice to soak up the delicious apricot sauce along with your favorite vegetables.
