One pot dinners are a must in any busy cook’s kitchen. With jammy caramelized onions and a rich beef broth its no surprise French onion soup is a comfort food classic and these flavors are perfect for a cozy pasta dinner. Equal parts easy and elegant this One Pot French Onion Pasta is great for weeknight and date night.

These cozy flavors of French onion soup lend themselves perfectly to a pasta dinner and the best part is about this one is everything is made in just one pot ( for more pasta dinners take a look at my One Pot Pasta Primavera with Shrimp , Creamy Mushroom and Asparagus Pasta and Easy Pesto Pasta ). The pasta cooks in the sauce and the starch released from the pasta, along with a splash of heavy cream and nutty gruyere cheese makes the sauce creamy and delicious.

Ingredients for French Onion Pasta

  • olive oil
  • unsalted butter
  • onions 
  • cremini mushrooms
  • garlic 
  • fresh thyme
  • kosher salt
  • ground black pepper
  • sherry or dry white wine
  • Worcestershire sauce
  • beef broth
  • rigatoni pasta
  • heavy cream
  • gruyere cheese
One Pot French Onion Pasta

How to Make French Onion Pasta

Heat the olive oil and butter in a large dutch oven over medium heat until the butter has melted. Add in the sliced onions and stir to ensure the onions are well coated. Cook the onions for 30 minutes, stirring every 3-4 minutes, until the onions are golden brown.

One Pot French Onion Pasta - preparation

Add in the sliced mushrooms, garlic and thyme and saute for 3-4 minutes. Pour in the sherry or wine, worcestershire sauce, and 1/2 tsp each of the salt and pepper and cook for an 1-2 minutes while scraping up the browned bits from the bottom of the pan with a wooden spoon.

Once the onions and mushrooms are finished add the beef broth and pasta into the pot and bring to a boil. Cook for 12 minutes or until the pasta is al dente. Stir in the the cream and gruyere cheese until the cheese is melted and fully incorporated and the sauce is creamy. Divide among four bowls and serve as desired.
