Chicken thighs are one of my favorite cuts to use. Chicken thighs are flavorful, moist and budget friendly. My secret for getting crispy skin when pan roasting chicken thighs to to pat them completely dry with paper towels and salt well before searing the chicken skin side down. This results crispy skin every time.

Just love this recipe, Tweaked it a bit ( I hope that’s okay! ) by adding shallots, and used sherry instead of white wine.( I just love the flavor of mushrooms sauteed in sherry ) Will definitely be adding this in to the rotation, the family loved it, simple, elegant, and delicious. Thank you again!

I have made many chicken dishes or my 72 years of living, but none as good or is easy to prepare as this recipe. The end result was a gourmet meal that could be served to your most special guests. I encourage everyone to try this recipe, you’ll be glad you did
