Fresh, light and easy to make this Pea Salad with Mint and Feta is delicious and comes together in minutes. Peas are usually thought of as a simple side but with a handful of ingredients they can be transformed into a delicious salad.

Pea Salad with Mint and Feta

This salad uses ingredients that you likely have in your fridge and pantry and elevates them into something slightly unexpected. Sweet green peas are balanced with a tangy lemon vinaigrette, salty feta and the freshness of mint. A sprinkle of pistachios provides a bit of crunch. This salad makes a great side for everything from seafood and chicken to lamb and ham (like my Garlic Herb Lamb Chops , Skillet Lemon Roasted Chicken and Apricot Glazed Ham) or is perfect for your next potluck. Ingredients for Pea Salad

  • peas, fresh or frozen
  • lemon juice
  • olive oil
  • dijon mustard
  • kosher salt
  • black pepper
  • fresh mint, chopped
  • crumbled feta cheese
  • pistaschios

Cooking Tips

  • You can use either fresh or frozen peas for this recipe
  • If you can find them fresh pea shoots would be a delicious garnish
  • I’ve included a recipe for a simple vinaigrette but you can also use your favorite dressing. This would be delicious with my Lemon Thyme Vinaigrette, Maple Dijon Vinaigrette or my Basil Vinaigrette.
  • Substitute sliced almonds or sunflower seeds for the pistachios

How to Make Pea Salad with Mint and Feta

Pea Salad with Mint and Feta Ingredients

Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to a bowl of cold water ( or an ice bath) to stop the cooking. In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper (Alternately you can place all the ingredients in a small mason jar and shake until well combined). Transfer the peas to a large bowl and add the mint,crumbled feta and pistaschios. Drizzle the dressing over the salad and toss to combine. Sprinkle with additional pitaschios and serve as desired.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

This fresh pea salad with mint and feta is a quick and easy spring side dish made with sweet peas, fresh herbs, and a bright lemon dressing. Perfect for Easter, brunch, or summer meals, this healthy pea salad is light, flavorful, and ready in minutes.

Ingredients
  

  • 2 cups peas fresh or frozen
  • 1/2 cup fresh mint, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pistachios
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

    I love this combination! My toddler daughter really really likes peas — so I love being able to incorporate them into an elegant salad like this for a change from the plain steamed ones we so often eat. The mint is really the perfect addition!
