This salad uses ingredients that you likely have in your fridge and pantry and elevates them into something slightly unexpected. Sweet peas are balanced with a tangy lemon vinaigrette, salty feta and the freshness of mint. A sprinkle of sunflower seeds provides a bit of crunch. This salad makes a great side for everything from seafood to lamb and chicken ( like my Garlic Herb Lamb Chops or Greek Yogurt Marinated Chicken) or is perfect for your next potluck or cookout.
Ingredients for Pea Salad
- peas, fresh or frozen
- lemon juice
- olive oil
- dijon mustard
- kosher salt
- black pepper
- fresh mint, chopped
- crumbled feta cheese
- sunflower seeds
How to Make Pea Salad with Mint and Feta
Add water to a medium saucepan and bring to a boil over medium high heat. Add peas and cook for 3 minutes. Drain peas and transfer to an ice bath to stop the cooking. In a small bowl whisk together lemon juice, olive oil, dijon mustard, salt and pepper. Transfer the peas to a large bowl and add the dressing, mint and crumbled feta and stir to combine. Sprinkle with sunflower seeds and serve as desired.

- 2 cups peas fresh or frozen
- 2 tbsp lemon juice
- 1 tbsp olive oil
