Originating in northeastern Italy gnocchi are Italian dumplings made with potatoes that are rolled and cut into little pillows with ridges to catch sauce. Like pasta gnocchi are a blank canvas and pair wonderfully with a wide vareity of sauces including pesto (take a look at my homemade Classic Basil Pesto and my Sun Dried Tomato Pesto), simple tomato sauces, creamy cheese sauces and of course this hearty bolognese sauce. I typically use store-bought gnocchi for ease (typically found near the dried pasta but sometimes can be found in the refrigerated section) but if you have some homemade gnocchi on hand they certainly will be delicious. How to Make Gnocchi Bolognese
This dish starts by making a quick and simple Bolognese sauce. Heat the olive oil in a large skillet over medium heat. Add the onion, carrot and garlic and saute the vegetables for 5 minutes or until the onions are fragrant and translucent. Add in the dried oregano and ground beef and cook for 8 minutes or until the beef has browned.

Pour in the peeled tomatoes (including the juice) as well as the chicken stock, salt and pepper. Use a wooden spoon to break up the tomatoes and simmer for 15 minutes or until the sauce has slightly thickened. Add in the gnocchi and stir ensuring the gnocchi are coated in sauce. Cook for 8 minutes or until the gnocchi are fully cooked through. Serve and top with grated parmesan cheese if desired.
