Ready in just 30 minutes my One Pot Gnocchi Bolognese is the ultimate quick comfort food dinner recipe. Filled with classic Italian flavors this simple Bolognese sauce comes together in a snap with tender gnocchi cooked right in the sauce making this cozy weeknight dinner.

One Pot Gnocchi Bolognese

Originating in northeastern Italy gnocchi are Italian dumplings made with potatoes that are rolled and cut into little pillows with ridges to catch sauce. Like pasta gnocchi are a blank canvas and pair wonderfully with a wide vareity of sauces including pesto (take a look at my homemade Classic Basil Pesto and my Sun Dried Tomato Pesto), simple tomato sauces, creamy cheese sauces and of course this hearty bolognese sauce. I typically use store-bought gnocchi for ease (typically found near the dried pasta but sometimes can be found in the refrigerated section) but if you have some homemade gnocchi on hand they certainly will be delicious. One Pot Gnocchi Bolognese

Ingredients

  • olive oil
  • onion 
  • carrot 
  • garlic 
  • ground beef
  • dried oregano
  • canned whole peeled tomatoes
  • chicken broth
  • kosher salt
  • ground black pepper
  • packaged gnocchi

How to Make Gnocchi Bolognese

This dish starts by making a quick and simple  Bolognese sauce. Heat the olive oil in a large skillet over medium heat. Add the onion, carrot and garlic and saute the vegetables for 5 minutes or until the onions are fragrant and translucent. Add in the dried oregano and ground beef and cook for 8 minutes or until the beef has browned.

One Pot Gnocchi Bolognese - Ingredients

Pour in the peeled tomatoes (including the juice) as well as the chicken stock, salt and pepper. Use a wooden spoon to break up the tomatoes and simmer for 15 minutes or until the sauce has slightly thickened. Add in the gnocchi and stir ensuring the gnocchi are coated in sauce. Cook for 8 minutes or until the gnocchi are fully cooked through. Serve and top with grated parmesan cheese if desired.

  • 1 Large Skillet

Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 large carrot diced
  • 2-3 cloves garlic minced
  • 1 pound ground beef
  • 1 tsp dried oregano
  • 1 28 oz can whole peeled tomatoes
  • 1/2 cup chicken broth
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 16 oz package gnocchi

Instructions
