Comfort food doesn’t always have to take hours and its great to have a quick recipe that is healthy, affordable and delicious. Simmered in a simple garlic parmesan broth cannellini beans are transformed into something truly special that’s easy enough to throw together on a busy weeknight. My recipe for Garlic Parmesan Braised Beans and Greens is cozy, nourishing and comes together in 20 minutes.

Creamy cannelini beans are the star of this simple dish bolstered with bold Italian flavored broth of garlic, parmesan and rosemary. Handfuls of baby spinach (you could also use another hearty green like kale or swiss chard) are stirred in at the end for an extra boost of color and nutrition. I like to make these braised beans as a simple winter lunch or dinner served along with a big slice of crusty bread (for other easy and healthy meals take a look at my Mediterranean Lentil Soup and my Spicy Roasted Cauliflower Soup). These brothy white beans are also a great side dish for hearty roasted meats or sausage.

Ingredients

  • olive oil
  • garlic cloves
  • onion 
  • fresh rosemary 
  • cannellini beans 
  • vegetable or chicken broth
  • kosher salt
  • ground black pepper
  • parmesan cheese 
  • baby spinach

How to Make Garlic Parmesan White Beans and Greens

This is an easy on pot meal that is incredibly simple to make. To start heat the olive oil in a large skillet over medium heat, add the sliced garlic and cook for 3-4 minutes or until golden brown. Remove the crispy garlic from the skillet and set aside, leaving at least 1 tbsp of the oil.

Add the diced onion and chopped rosemarry to the pan and cook for 3-4 minutes, or until the onions are transluscent. Add in the cannellini beans, broth, salt and pepper and bring to a simmer. Add in the parmesan cheese in batches, ensuring it gets fully incorporated. Stir in the baby spinach and cook until it has wilted. Divide among 4 bowls (2 bowls for a larger serving) and top with the crispy garlic chips.
