I don’t know what magical alchemy occurs with just 3 ingredients but this simple combination of peanut butter, brown sugar and egg comes together to make a cookie that is slightly crumbly and full of peanut butter flavor. Feel free to use creamy or crunchy peanut butter, and if you’re using natural peanut butter like I do make sure it’s well stirred. Lastly, don’t forget the criss-cross pattern! Making the crosshatch pattern with a fork flattens the cookies before baking as well as giving these peanut butter cookies a signature look to distinguish them from other cookies. Love peanuts? I LOVE that these took only 3 ingredients! They came out so good! Also love that it’s gluten free for those who can’t have gluten.
