One Pot Gnocchi Bolognese

Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 large carrot diced
  • 2-3 cloves garlic minced
  • 1 pound ground beef
  • 1 tsp dried oregano
  • 1 28 oz can whole peeled tomatoes
  • 1/2 cup chicken broth
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 16 oz package gnocchi

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the onion, carrot and garlic and saute for 5 minutes or until the onions are fragrant and translucent. Add in the dried oregano and ground beef and cook for 8 minutes or until the beef has browned.
  • Pour in the peeled tomatoes (including the juice) as well as the chicken stock, salt and pepper. Use a spoon to break up the tomatoes and simmer for 15 minutes or until the sauce has slightly thickened.
  • Add in the gnocchi and stir ensuring the gnocchi are coated in sauce. Cook for 8 minutes or until the gnocchi are fully cooked through. Served as desired
