Heat the olive oil in a large skillet over medium heat. Add the onion, carrot and garlic and saute for 5 minutes or until the onions are fragrant and translucent. Add in the dried oregano and ground beef and cook for 8 minutes or until the beef has browned.
Pour in the peeled tomatoes (including the juice) as well as the chicken stock, salt and pepper. Use a spoon to break up the tomatoes and simmer for 15 minutes or until the sauce has slightly thickened.
Add in the gnocchi and stir ensuring the gnocchi are coated in sauce. Cook for 8 minutes or until the gnocchi are fully cooked through. Served as desired
