There are as many ways of making egg salad as there are cooks that make it. Avocado amps up both the flavor and nutrition of a basic egg salad. I usually serve avocado egg salad on a bed of lettuce for a light and healthy lunch ( for another great lunch take a look at these delicious Bombay Sandwiches) but would be equally delicious as a sandwich, served with crackers or spread on top of a bagel.
Ingredients for Avocado Egg Salad
- hard boiled eggs
- avocado
- mayonnaise
- dijon mustard
- smoked paprika
- kosher salt
- ground black pepper
Tips for Making Great Avocado Egg Salad
- Use a good quality mayonnaise ( I’m partial to this brand) or try making homemade mayo. Greek yogurt would also be a great substitute.
- Don’t overly mash the avocado. Chunks of avocado add a nice textural contrast to the creamy egg salad.
- Change up the flavor with fresh herbs. Chives, parsley, tarragon or basil would all be great options
How to Make Avocado Egg Salad
In a large bowl add chopped hard boiled egg, diced avocado, mayonnaise, dijon mustard, smoked paprika, salt and pepper. Stir until fully combined and serve as desired.

- 1 large avocado diced
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1/4 tsp smoked paprika
- 1/4 tsp kosher salt
