Aperol isn’t just for spritzes. This beautiful bittersweet liqueur is a wonderful addition to a wide variety of cocktails. Paired with gin, lemon juice, bitters and simple syrup as well as a frothy meringue-like layer courtesy of egg white Aperol is the base of a drink that is elegant and approachable. This Aperol Sour is a cocktail you’re sure to love.

What is Aperol?

Aperol is a popular Italian liqueur best known as the main ingredient of an Aperol Spritz. With a bright orange color, slightly bitter flavor and a low alcohol content (11%) Aperol is commonly consumed before dinner as an apertif but can be used in a number of cocktails.

What is a Dry Shake?

A dry shake is a technique used in cocktails where egg white and citrus (along with other cocktail ingredients) are shaken without ice to emulsify and create a cramy, frothy layer that is common with many sour cocktails. The drink is then shaken again with ice(known as a wet shake) until properly chilled.

How to Make an Aperol Sour

Add Aperol, gin, lemon juice, simple syrup and egg white to a cocktail shaker. Shake for 20-30 seconds without ice (this is known as a dry shake and forms the foamy top layer of the drink. Add ice to the cocktail shaker and shake for 15 seconds or until chilled. Strain into a chilled cocktail glass with a hawthorne strainer and serve.
