Few meals are as warm an cozy as a big bowl of chili. With a double dose of flavor from ground beef and spicy Mexican chorizo as well as two kinds of beans this is a chili that’s big on taste and ready in 30 minutes. This recipe for Beef and Chorizo Chili is easy to make and a hearty dinner you’re sure to love.

With a big punch of flavor this beef and chorizo chili is perfect for dinner, potlucks and game day parties. Mexican chorizo is a ground pork sausage flavored with paprika, cumin and garlic giving this chili slow cooked taste in just 30 minutes. I also like to use a mix of black beans and pinto beans for their differing textures but you can also use all black beans, all pinto beans or even kidney beans if that’s what you’ve got on hand.

Ingredients

  • ground beef
  • Mexican chorizo
  • olive oil
  • onion
  • garlic 
  • smoked paprika
  • ground cumin
  • dried oregano
  • beef broth
  • crushed tomatoes
  • black beans
  • pinto beans
  • kosher salt
  • ground black pepper
Beef and Chorizo Chili

How to Make Beef and Chorizo Chili

In a medium bown mix together the ground beef and Mexican chorizo with your hands until fully combined and set aside.

Heat the olive oil in a large Dutch oven over medium heat. Sprinkle in the smoked paprika, ground cumin and oregano and cook for 1 minute or until fragrant. Add the onions and garlic and cook for 3-4 minutes or until translucent. Add in the beef and chorizo mixture and cook until browned ,about 6 minutes.

Pour in the beef broth and crushed tomatoes as well as the black beans, pinto beans, salt and pepper. Bring the chili to a boil, then reduce to a simmer and cook for 15 minutes. Ladle into bowls and serve as desired.

Ingredients
  

  • 1/2 pound ground beef
  • 1/2 pound Mexican chorizo
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1 large onion diced
  • 2-3 cloves garlic minced
  • 2 cups beef broth
  • 1 15oz package crushed tomatoes
  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can pinto beans
  • 1 tsp kosher salt
  • 1 tsp ground black pepper

Instructions
 

  • In a medium bown mix together the ground beef and Mexican chorizo with your hands until fully combined and set aside.

    This quickly became my favorite chili recipe. The chorizo really adds a unique flavor profile to an already flavorful dish. Admittedly, I used Brianna’s recipe for a chili cookoff soon after she posted it and we actually won! I would say perfect for the cold winter months but honestly this will be making an appearance on our table year-round.
