Cozy, healthy and delicious and with the flavors of pumpkin pie my pumpkin baked oatmeal is the best way to start the day. Baked oatmeal is great make ahead breakfast that’s perfect for meal prep or feeding a family in the morning. Warm and comforting my Pumpkin Baked Oatmeal is great fall breakfast that’s nourishing and flavorful.

Hearty, healthy and versatile oats are one of my favorite ingredients for breakfast. Flavored with pumpkin and warm fall spices these baked oats are easy to make and perfect for meal prep or feeding a large group (for other great pumpkin recipes for breakfast take a look at my Pumpkin Pecan Waffles, Pumpkin Spice Granola and Pumpkin Spice Coffee Creamer). Preparation is done in just one bowl and then your oven does the rest of the work. This baked oatmeal is delicious as is or you can top it with a dollop of yogurt or a drizzle of maple syrup.

Ingredients

  • rolled oats
  • baking powder
  • ground cinnamon
  • ground nutmeg
  • ground ginger
  • ground cloves
  • kosher salt
  • pumpkin puree
  • milk (dairy or non-dairy)
  • brown sugar
  • large eggs
  • vanilla
  • pecans (optional) 
Pumpkin Baked Oatmeal

How to Make Baked Pumpkin Oatmeal

The prep for this oatmeal is quite simple and done all in one bowl. Preheat the oven to 375โ„‰. In a large bowl stir together the rolled oats, baking powder, cinnamon, nutmeg, ginger, cloves (you can also use 1 tsp of pumpkin pie spice in place of the cinnamon, nutmeg, ginger and cloves) and salt. Add in the pumpkin puree, milk, brown sugar, eggs and vinnila and stir to combine. If using, stir in the pecans.

Prepare an 8×8 inch baking dish with cooking spray or olive oil. Pour the oatmeal into the baking dish and transfer to the oven. Bake for 30-35 minutes or until the top is set and golden. Let cool for 5 minutes before serving.
