One of the best things about these marinated cherry tomatoes is just how versatile they are! Here are a few of my favorite ways to use them.
- Serve them on sliced baguette with whipped ricotta for an easy appetizer
- Add these tomatoes to your sandwich or salad for a flavor boost
- Use as a topping for your favorite protein like chicken, fish or steak
- Serve as part of a summer cheese board
- Spoon onto your morning toast with avocado slices and a fried egg
- Add your favorite cheese like mozzarella cheese, burrata or feta cheese

Cooking Tips
- While I typically use smaller tomatoes like cherry tomatoes or grape tomatoes this recipe also works well with sliced heirloom tomatoes
- You can customize this recipe to your tastes with additions like minced garlic, sliced red onion, sliced or chopped cucumbers or red pepper flakes
- Use white balsamic vinegar or red wine vinegar for a different flavor profile
- Instead of basil you can use your favorite fresh herbs like oregano, parsley or chives
How to Make Balsamic Marinated Tomatoes
Since this tomato salad uses only a few ingredients feel free to use your good olive oil and balsalmic vinegar (though your every day balsamic and olive oil are just fine). In a medium mixing bowl whisk together the olive oil, balsamic vinegar, kosher salt and ground black pepper. Add in the halved cherry tomatoes and basil and stir to gently toss the tomatoes, ensuring they are coated with the vinaigrette. Allow to sit for at least 30 minutes or up to 24 hours before serving.

Storage
Store in an airtight container in the refrigerator for up to 3 days. Serve chilled or at room temperature.
