Ricotta is a fresh Italian cheese made from cow’s milk and it’s signature light and creamy texture make it a staple in everything from lasagna and stuffed pastas like ravioli to desserts like canolli and cheesecake. On it’s own ricotta has small curds but whipping those curds in a food processor transform into a silky and ethereal ricotta spread with a light flavor that pairs well with a variety of foods.
Ingredients
- Ricotta cheese, preferably whole milk ricotta
- Extra-virgin olive oil
- Salt
- Fresh lemon zest

How to Serve Whipped Ricotta
My favorite thing about whipped ricotta is just how versatile it is! Some of my favorite combinations include adding a bit of honey with mint and chopped pistaschios or served alongside marinated tomatoes for next level bruschetta. Below I’ve included a few variations to adjust this basic whipped ricotta recipe to your taste.
- Blend in or top with some of your favorite fresh herbs like thyme, basil, parsley, mint or rosemary
- Add in 1 tablespoon of honey prior to whipping the ricotta or drizzle over the top (and if you like a bit of sweet heat you can use hot honey!)
- Sprinkle crushed nuts like pistaschios or almonds on top for a delicate crunch
- Make a delicious ricotta toast for breakfast and top with fresh berries
- Use as a base for roasted vegetables such as spiced cauliflower or maple roasted carrots
- Stir into warm pasta with fresh basil, cherry tomatoes and roasted garlic for an easy and delicious pasta sauce
- Serve with pita chips, crostini, crackers or frresh vegetables for a simple appetizer
- Dollop on top of your favorite pizza or flatbread (or my delicious Mushroom Puff Pastry Tart!)
How to Make Whipped Ricotta


Since this whipped ricotta uses only a few ingredients it’s worth taking the time to seek out the best. Whole milk ricotta, extra virgin olive oil, flaky sea salt and fresh lemon zest are all that’s needed to make whipped ricotta really shine. In the bowl of a food processor add in the whole milk ricotta cheese, olive oil, lemon zest and salt. Process the ricotta for at least 2 minutes or until smooth and creamy.
Transfer to a bowl and garnish with a drizzle of olive oil or honey, fresh thyme or flaky sea salt. Serve with your choice of crackers, baguette slices or crostini, vegetables or fruit.

Storage
You can store this whipped ricotta in an airtight container in the fridge for up to one week.
