How to Make a Peach and Burrata Salad

Start by making a batch of this delicious basil salad dressing. In a high speed blender add in the basil leaves, garlic, red wine vinegar, dijon mustard, salt, pepper and olive oil.. Blend for 1 minute ensuring everything is well combined and the dressing is smooth.Transfer to a glass container and drizzle over the salad. If you have extra dressing left over (or have made a double batch, which I recommend) you can store it in an airtight glass container in the fridge for up to a week.
To compose the salad place the arugula on a large platter and top with peach slices. Roughly chop or tear the burrata and arrange throughout the salad. Sprinkle on the pistachios and drizzle the basil vinaigrette over the salad.
