This Peach and Burrata Salad is the ultimate summer salad. A combination of peppery arugula, ripe peaches and creamy burrata cheese bring together a vareity of tastes and textures that highlight the best of summer. This delicious salad comes together in minutes and is packed with flavor.

This peach burrata salad has just a few ingredients but is big on taste. Arugula is a great base for the sweetness of fresh summer peaches and richness of creamy burrata. A sprinkle of pistachios brings in a nutty crunch and everything gets topped off with an incredibly flavorful homemade basil vinaigrette. You can serve this salad as a side dish or as a light lunch, or you can make it heartier meal with the addition of your favorite protein like chicken, shrimp or steak.

Ingredients

  • Arugula
  • Fresh peaches 
  • Burrata cheese
  • Pistaschios
  • Basil vinaigrette

For the Basil Vinaigrette

  • Fresh basil leaves
  • Garlic
  • Red wine vinegar
  • Dijon mustard
  • Kosher salt
  • Ground black pepper
  • Extra virgin olive oil

Cooking Tips

  • Feel free to use nectarines if that’s what you have or use grilled peaches for another layer of flavor
  • Customize your salad by adding in cherry tomatoes, sliced red onions, apricots or fresh plums
  • Add in your favorite fresh herbs like basil, mint or thyme
  • If you can’t find burrata fresh mozzarella would also be delicious
  • Change up the salad dressing with a simple balsamic vinaigrette or my lemon thyme vinaigrette
  • Use sliced almonds or chopped pecans instead of pistachios if you’d like

How to Make a Peach and Burrata Salad

Start by making a batch of this delicious basil salad dressing. In a high speed blender add in the basil leaves, garlic,red wine vinegar, dijon mustard, salt, pepper and olive oil.. Blend for 1 minute ensuring everything is well combined and the dressing is smooth.Transfer to a glass container and drizzle over the salad. If you have extra dressing left over (or have made a double batch, which I recommend) you can store it in an airtight glass container in the fridge for up to a week.

To compose the salad place the arugula on a large platter and top with peach slices. Roughly chop  or tear the burrata and arrange throughout the salad. Sprinkle on the pistachios and drizzle the basil vinaigrette over the salad.

Ingredients
  

  • 4 cups arugula
  • 2 large peaches sliced
  • 8 oz burrata cheese
  • 1/3 cups pistachios
  • Basil vinaigrette

For the Basil Vinaigrette

  • 2 cups fresh basil leaves
  • 1-2 cloves garlic
  • 2 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 cup oilive oil

Instructions
 

  • Place the arugula on a large platter and top with sliced peaches and sliced burrata. Sprinkle the pistachios and drizzle the basil vinaigrette over the salad.

For the basil vinaigrette

  • Add the basil leaves, garlic,red wine vinegar, dijon mustard, salt, pepper and olive oil to a high speed blender. Blend for 1 minute ensuring everything is well combined and the dressing is smooth.Transfer to a glass container and drizzle over the salad. If you have extra dressing you can store in the refrigerator for up to a week.
