This delicious Apple Cider Mimosa uses just two ingredients and is the perfect fall twist to your favorite brunch drink. Serve thise autumn mimosas as part of your Thanksgiving menu or as part of a cosy fall brunch alongside Pumpkin Pecan Waffles, Apple Scones with Maple Glaze and Quiche with Butternut Squash. Ingredients
- Apple cider
- Prosecco
- cane sugar or turbinado sugar
- ground cinnamon
Variations
- Add some sweetness to your mimosa with 1/2-1 ounce of flavored simple syrup like my cinnamon simple syrup or ginger honey simple syrup
- Customize your mimosas with the addition of 1 ounce of your favorite spirit like bourbon, caramel vodka, dark rum or brandy
- Feel free to use brown sugar in place of the cane sugar for the cinnamon sugar rim
- You can certainly use champagne,cava or yourfavorite sparkling wine in place of the prosecco
- If you can’t find apple cider you can substitute apple juice but the apple flavor of your mimosa won’t be as pronounced
- Garnish with a slice of fresh or dried apple, cinnamon sticks, star anise or a sprig of fresh rosemary

How to Make Apple Cider Mimosas
Whether you’re making a single drink or a big batch these mimosas are a delicious way to celebrate fall and they also happen to be incredibly easy to make. We’re going to start with a cinnamon sugar rim, not only does this make your drink pretty the sweet rim enhances the flavor of the fresh apple cider. For the cinnamon sugar rim stir together cinnamon and sugar in a small flat dish. Cut a small slit in a lemon wedge and run it around the rim of a champagne glass, then immediately roll the edge of the glass in the cinnamon sugar mixture.
For a single cocktail Add 2 oz of apple cider to a prepared champagne flute and top with prosecco. Garnish with a cinnamon stick or a thin slice of apple for an extra festive drink. If you’re making a pitcher for a group ( which will make 8 servings). Add 2 cups of apple cider to a pitcher and top with 2 bottles of prosecco or sparkling wine, garnish the pitcher with thin apple slices ( if you make a pitcher ahead of time you can store it in the fridge before serving). Divide among 8 glasses and serve as desired.

Ingredients
For the cinnamon sugar rim
- 2 tablespoons cane sugar or turbinado sugar
- 1 teasoon ground cinnamon
For a single cocktail
- 2 oz apple cider
- 6 oz prosecco
For a pitcher
- 2 cups apple cider
- 2 750 ml bottles prosecco
Instructions
For the cinnamon sugar rim
- Stir together cinnamon and sugar in a small flat dish. Cut a small slit in a lemon wedge and run it around the rim of a champagne glass, then immediately roll the rim of the glass in the cinnamon sugar mixture.
For a single cocktail

For a pitcher (8 servings)
- Add 2 cups of apple cider to a pitcher and top with 2 bottles of prosecco. Divide among 8 glasses and serve as desired.

This was DELICIOUS!!! It was the perfect ratio of apple cider to prosecco. On the second one I added 1/2 oz Smirnoff caramel vodka and it was also DELICIOUS! Highly recommend a little caramel vodka. I used Spiced Cider from Aldi.
