Cinnamon Simple Syrup is a great way to enhance your favorite drinks and desserts and making simple syrup at home couldn’t be easier. Spicy and sweet, cinnamon is one of my favorite simple syrups to make and elevates up everything from my morning coffee to afternoon tea and of course my favorite classic cocktails. With just three ingredients making cinnamon syrup at home is easy and takes just minutes .

What is simple syrup?
Simple syrup is a mixture sugar dissolved in water and making your own simple syrup is quite easy. Traditional simple syrup is an equal 1:1 ratio or equal parts water and sugar. Thin simple syrup is less sweet with a less viscous texture with a 2:1 ratio of water to sugar. Thick simple syrup is 2 parts sugar to 1 part water with a sweeter flavor. You can use use a variety of sugars to change up your simple syrup as well. Standard granulated white sugar makes a good standard simple syrup but you can also use demerara, honey or coconut sugar depending on your preferences. You can make a variety of flavors including Lavender Simple Syrup, Vanilla Simple Syrup, Cranberry Simple Syrup, Honey Ginger Simple Syrup and Rosemary Simple Syrup.
You can use cinnamon simple syrup anywhere you’d like to add a bit of spice and sweetness. Add cinnamon simple syrup to your favorite beverages like hot or iced tea, or make a cafe-style hot or iced cinnamon coffee right at home. You can also use cinnamon simple syrup to make a number of delicious mocktails and cocktails (like my Cinnamon Old Fashioned or my Apple Cider Mimosa).

Ingredients for Cinnamon Simple Syrup
- White sugar
- Water
- Cinnamon sticks
Cooking Tips
- Substitute honey, brown sugar or demerara sugar for the granulated sugar for a richer flavor
- For a thicker syrup use 2 parts sweetener to 1 part water
- Don’t have cinnamon sticks? You can use 2 teaspoons of ground cinnamon instead
How to Make Cinnamon Simple Syrup
This simple syrup recipe is incredibly easy to make. In a small saucepan combine sugar, water and cinnamon sticks. Over medium heat bring to a boil making sure the sugar dissolves. Remove the pan from the heat and cover, allowing the simple syrup to steep for 20-30 minutes.


Transfer the simple syrup to a clean glass jar (I absolutely love these tulip jars) or mason jar, you can choose to remove the cinnamon sticks now or place them in the jars with the simple syrup for a stronger cinnamon flavor. Cinnamon simple syrup can be stored at room temperature for 1 week or in the refrigerator for a month.
Storage
This Cinnamon syrup can be stored in an airtight container at room temperature for 1 week or in the refrigerator for up to a month.

Equipment
- 1 medium saucepan
- glass jars
Ingredients
- 1 cup white sugar
- 1 cup water
- 4 cinnamon sticks
Instructions
- Combine water, sugar and cinnamon in a medium saucepan and bring to a simmer until sugar is fully dissolved.
- Cover and remove from heat, allow to steep for at least 20 minutes.
- Transfer into clean glass jars (you can choose to remove the cinnamon sticks now or leave them in the jar for a more pronounced cinnamon flavor. Serve as desired.
