Quiche is one of my go-to, all purpose, jack of all trades dishes. Fancy brunch with mimosas ? Quiche. Light lunch paired with a salad? Quiche again. Quiche is budget friendly and a great make ahead dish as well. Add sweet butternut squash and creamy goat cheese and quiche goes from simple to divine. The butternut squash quiche with goat cheese and rosemary is sure to become a staple in your weekend meal line up.

What is Quiche?

At it’s heart quiche is a custard, a mixture of eggs and milk baked into a pastry crust (it can also be made crust free). This base has endless variations that you can customize with different veggies, herbs, cheeses and even bacon or ham.

How to cut a butternut squash

You can certainly precut butternut squash if you’d like (I’d still cut it up a bit further to get half inch sized cubes) but chopping up a whole butternut squash isn’t that difficult but you will need a few basic kitchen tools including a large cutting board, a large sharp knife and a vegetable peeler. Start by peeling the firm outer skin of the butternut squash and then use the knife to cut the stem and root ends. Lay the squash on it’s side and cut into slices, using a spoon to remove the seeds. Cut the slices into cubes, and freeze any leftover squash to be used for later.

How to Make Quiche

If using homemade pastry crust you will need to prebake, also known as blind baking, to ensure the crust is not soggy. If you’re using a store bought refrigerated pie crust I recommend following the directions on the package (some recommend a blind bake while others will have you bake the quiche with the crust as is.). Once the crust is prepared start off sauteeing the veggies and rosemary until the butternut squash is soft and cooked through (the smaller dice helps with this), spread the veggies in an even layer over the crust and sprinkle tangy goat cheese on top of that. In a large bowl whisk together the eggs, milk, salt and pepper and then pour this over the veggies.

Pop this in the oven and 40 minutes later your quiche should be puffy, gold brown and delicious. Let the quiche rest for at least 10 minutes (or pop in the fridge if you’re preparing it the night before) and slice.

Butternut Squash Quiche with Goat Cheese and Rosemary

This butternut squash quiche with goat cheese and rosemary is perfect for breakfast, brunch or a light dinner. Learn how to make the perfect quiche at home with this easy recipe.

Equipment

  • 10 inch tart pan or 9 inch pie dish

Ingredients
  

  • 1 refrigerated 9 in pie crust or homemade pie crust
  • 1 tbsp olive oil
  • 2 cups butternut squash diced
  • 1 large leek sliced
  • 1 tbsp fresh rosemary
  • 5 oz goat cheese crumbled
  • 4 large eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400 degrees. Prepare refrigerated pie crust per box, if using homemade pie crust roll onto tart pan and fill with pie weights or dried beans. Bake for 10 minutes and remove from oven. Heat olive oil in a large skillet over medium high heat and saute butternut squash for 6 minutes. Add leeks and rosemary and cook for 2 more minutes and remove from heat.
  • In a large bowl whisk together eggs, milk, salt and pepper. In the tart pan spread the butternut squash mixture evenly over the pie crust and sprinkle goat cheese crumbles over the top. Pour egg mixture evenly over the vegetables.
  • Place quiche in the oven and bake for 40 minutes. The crust should be puffy and golden when done. Let the quiche cool for 15 minutes, cut into 8 slices and serve.

    My mouth is literally watering right now. The golden brown top looks absolutely perfect and I have no doubt this quiche is so comforting with the goat cheese and other fall flavors. I’m not a huge fan of crust so I’ll be making this crustless but I’m sure it will be just as good. Can’t wait!
