Few things are better on a weekend morning that a plate piled high with freshly made waffles drizzled with maple syrup. Creamy pumpkin, warm autumn spices and a handful of crunchy pecans are a sure way to upgrade your classic waffles. This recipe for Pumpkin Pecan Waffles will turn any morning into a celebration.

While I love pancakes for me there is something extra special about waffles. Light and fluffy inside, golden and crispy on the outside and all of those little pockets that hold the perfect bite of melted butter and maple syrup waffles are just a bit more indulgent (be sure to look at my Decadent Chocolate Waffles as well!). Ingredients for Pumpkin Pecan Waffles
- all purpose flour
- baking powder
- ground cinnamon
- ground nutmeg
- ground cloves
- kosher salt
- buttermilk
- pumpkin puree
- vegetable oil
- brown sugar
- vanilla extract
- large eggs
- chopped pecans
How to Make Pumpkin Pecan Waffles
Preheat your waffle iron per manufacturer’s instructions. You will need 3 mixing bowls. In one bowl combine flour, baking powder, cinnamon, nutmeg,cloves and salt and whisk to combine. In another bowl whisk together buttermilk, pumpkin puree, egg yolks, vegetable oil, brown sugar and vanilla extract. In the last bowl beat the egg whites with an electric mixer into stiff peaks. Add the buttermilk mixture and chopped pecans to the flour mixture and stir to combine (there may be a few lumps, which is fine). Gently fold in the egg white mixture.
Brush the waffle iron with butter and add the batter using 1/3 cup (or more depending on your waffle iron) and cook per manufacturer’s instructions. Serve with butter, maple syrup or whipped cream.
How to Freeze Waffles
You can absolutely make these waffles ahead of time and freeze them for later. Allow the waffles to fully cool before transferring them to a freezer safe zip top storage bag, removing as much air from the bag as possible before sealing.These waffles will last in the freezer for up to 3 months. To reheat you can use the microwave, pop them in a 350 degree F oven for 10-12 minutes (great for reheating a large batch) or you can use your toaster.
