A good quiche recipe is one of those recipes that everyone needs in their back pocket. Weekend brunch with mimosas? Quiche. Light lunch paired with a salad? Quiche again. Quiche is budget friendly, a great make ahead dish and gets even better when filled savory ham and fresh asparagus. This Ham and Asparagus Quiche recipe is easy to make and perfect for casual weekends to holiday brunch.

What is Quiche?

At itโ€™s heart quiche is a egg custard, a mixture of eggs and milk baked into a pastry crust (it can also be made crust free). This base has endless variations that you can customize with different veggies (including spinach, broccoli, mushrooms and tomatoes), herbs, cheeses as well as bacon, ham or sausage. Ingredients for Ham and Asparagus Quiche

  • pie crust (refrigerated or homemade)
  • olive oil
  • leek 
  • asparagus 
  • diced ham
  • large eggs
  • milk
  • kosher salt
  • ground black pepper
  • shredded Gruyere cheese 
Ham and Asparagus Quiche

How to Make Ham and Asparagus Quiche

Preheat the oven to 400 degrees. Prepare store-bought pie crust per box instructions, if using homemade pie crust roll the prepared pie dough onto tart pan or pie dish and fill with pie weights or dried beans. Bake for 10 minutes and remove from oven. Heat olive oil in a large skillet over medium high heat and saute sliced leeks and asparagus for 4-5 minutes. Remove from heat and set aside. In a large bowl whisk together eggs, milk, salt and pepper. Add the asparagus and leeks to the pie or tart pan along with the diced ham. Pour the egg mixture over the ham and vegetables and sprinkle shredded Gruyere cheese over the top.Place quiche in the oven and bake for 40 minutes. The crust should be puffy and golden when done. Let the quiche cool for 15 minutes, cut into 8 slices and serve.

Ingredients

  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 cup Gruyere cheese shredded
