Perfect for a fall breakfast or a weekend brunch these Pumpkin Pecan Waffles are easy to make. This pumpkin waffle recipe is great any time but especially nice on Thanksgiving or Christmas morning.
Preheat your waffle iron per manufacturer's instructions.
You will need 3 mixing bowls. In one bowl combine flour, baking powder, cinnamon, nutmeg, cloves and salt and whisk to combine.
In another bowl whisk together buttermilk, pumpkin puree, egg yolks, vegetable oil, brown sugar and vanilla extract. In the last bowl beat the egg whites with an electric mixer into stiff peaks.
Add the buttermilk mixture and chopped pecans to the flour mixture and stir to combine (there may be a few lumps, which is fine). Gently fold in the egg white mixture.
Brush the waffle iron with butter and add the batter using 1/3 cup (or more depending on your waffle iron) and cook per manufacturer's instructions. Serve with butter, maple syrup or whipped cream.
