Starting with a simple homemade dressing of mayo,a double dose of lime, honey and a splash of apple cider vinegar this cole slaw is fresh and light. Crisp cabbage, green onions and a generous dose of cilantro provide a nice texture and a ton of flavor for this slaw.
Ingredients
- Mayonnaise or greek yogurt (you can also use greek yogurt or sour cream)
- Honey (or agave syrup)
- Apple cider vinegar
- Fresh lime zest
- Fresh lime juice
- Kosher salt
- Ground black pepper
- Green cabbage
- Red cabbage
- Green onions
- Cilantro

- You can use agave syrup instead of honey for a bit of sweetness

How to Make Cilantro Lime Coleslaw
Start by making a simple coleslaw dressing. In a large bowl whisk together the mayonnaise, honey, apple cider vinegar, lime zest and juice, salt and pepper until well combined.
Add in the green and purple cabbage, cilantro and green onions. Toss the cabbage mixture together with the dressing ingredients ensuring the cabbage is fully coated by the dressing. Serve as desired.

Storage
This coleslaw is best served fresh but you can store it in an airtight container in the refrigerator for up to 3 days.

Ingredients
- 1/2 cup mayonnaise or greek yogurt
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tbsp fresh lime zest
- 1 tbsp fresh lime juice
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 2 cups green cabbage thinly sliced
- 2 cups red cabbage thinly sliced
- 2 green onions sliced
- 1/2 cup cilantro roughly chopped
Instructions
- In a large bowl whisk together the mayonnaise, honey, apple cider vinegar, lime zest and juice, salt and pepper until well combined.
- Add in the green and red cabbage, cilantro and green onions. Toss the coleslaw together ensuring the cabbage is fully coated by the dressing.
- Serve as desired.
