Main Course
On Thanksgiving turkey is the star of the show and whether you’re feeding a crowd or having a smaller gathering I’ve got you covered. Spatchcocking, or removing the backbone to lay the turkey flat, ensures that your turkey cooks evenly and in less time than cooking a traditional roast turkey (make sure you’ve got a sturdy set of poultry shears for this, or you can ask your butcher to spatchcock your bird) while a simple dry brine overnight imparts flavor and gives your turkey the crispiest skin every time. If it’s just the two of you or you don’t feel like making a big bird give my maple mustard turkey tenderloins a try. Also my turkey pot pie with puff pastry crust is a great way to use leftovers.
