When it comes to easy side dishes polenta is one of my standards. Creamy, hearty and versatile polenta definitely deserves a spot on your table. With sweet pumpkin and savory sage this polenta is perfect for any fall dinner. My Pumpkin Polenta with Sage is easy to make and ready in about 25 minutes.

What is Polenta?

Originating in Northern Italy polenta is made from coarsely ground cornmeal. Polenta is typically prepared with broth, milk or water (like my Simple Italian Polenta) and can be served as a creamy porridge or baked into a firmer consistency and cut into squares. Polenta can be served on it’s own as a side dish, also polenta is often topped with marinara or ragu but can be a great base for any sauce.

How to Make Pumpkin Polenta with Sage

Like traditional polenta this pumpkin polenta with sage is quite simple to make. Start with bringing a mixture of water and milk to a boil (you can also use all water or all milk if you’d prefer. I like to add cream cheese and parmesan for extra creaminess later on). Reduce the heat and whisk in polenta (I absolutely love Bob’s Red Mill Polenta). Slowly whisk polenta until it starts to thicken, about 5-6 minutes. Stir in pumpkin puree (canned or fresh pumpkin puree works just fine), cream cheese, parmesan, salt, pepper and sage until thoroughly combined. Top with additional parmesan cheese or sage and dig in!

Equipment

  • medium saucepan

Ingredients
  

  • 1.5 cups water
  • 1.5 cups milk
  • 1 cup polenta
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 3/4 cup pumpkin puree
  • 2 oz cream cheese
  • 1/4 cup Freshly grated parmesan
  • 1 tbsp chopped fresh sage

Instructions
 

  • Add milk and water to a medium saucepan and bring to a boil over medium heat.
  • Whisk in polenta and decrease heat to medium low. Slowly whisk polenta until it starts to thicken, about 5-6 minutes.
  • Stir in pumpkin puree, cream cheese, parmesan, salt, pepper and sage until thoroughly combined. Top with additional parmesan and sage if desired.

Notes

You can use all water, all milk or a combo as I did when making this polenta.
Canned or fresh pumpkin puree both work well with this recipe.

    I have made flavored polenta, and flavored grits, but Ive never thought of adding cream cheese to the recipe. This makes these extra creamy, and the addition of the canned pumpkin makes it perfect for this time of year.
