A good pasta salad is a must for any summer party and my easy Mediterranean Pasta Salad may just be the best pasta salad recipe for your next get together. Loaded with cucumbers, tomatoes and tons of fresh herbs the Greek pasta salad is perfect for everything from a casual cookout to an elegant al fresco dinner party.

For this Mediterranean pasta salad recipe I took the flavors from my Cucumber and Tomato Salad with Feta, doubled the simple red wine vinaigrette dressing and added lots of freshly cooked pasta. This is a delicious cold pasta salad that is loaded with veggies and lots of fresh herbs making it a light and refreshing summer side dish perfect for your next cookout. Serve this Greek pasta salad with chicken, beef, shrimp or seafood. (This would be great with my Smoked Spatchcock Chicken, Grilled Skirt Steak with Avocado Crema, Grilled Shrimp Skewers with Pesto or Grilled Cedar Plank Salmon ).

Ingredients
- Dried pasta, such as shells or farfalle
- English cucumber
- Cherry tomatoes
- Fresh parsley
- Fresh mint
- Feta cheese, crumbled
- Olive oil
- Red wine vinegar
- Dried oregano
- Kosher salt
- Ground black pepper
Cooking Tips
- Mint and parsley are a traditional combination but you can switch up the herbs with fresh basil, oregano or fresh dill.
- While I prefer shells or corkscrew pasta you can use your favorite short pasta shapes including penne or fusilli pasta.
- I like to use smaller cherry tomatoes but you can also dice up a larger tomato if thatโs what you have.
- This simple red wine vinaigrette can be used as a salad dressing for nearly any salad, and you can substitute white wine vinegar for the red wine vinegar if thatโs what you have on hand.
- Other delicious additions to this salad include sliced red onion, kalamata olives, red peppers or chickpeas).
How to Make Mediterranean Pasta Salad


Cook the pasta per package directions in a large until it’s al dente and then drain the pasta and rinse with cold water in order to stop the cooking. While the pasta is cooling prepare the red wine vinaigrette. In a small bowl whisk together the dressing ingredients red wine vinegar, dried oregano, salt and pepper. Slowly whisk in the olive oil until the dressing is fully incorporated. In a large bowl combine the pasta, sliced cucumbers, tomatoes, parsley, mint and feta. Pour the dressing over the pasta salad and toss until fully combined.
You can serve the salad immediately but for the best flavor allow the pasta salad to chill in the refrigerator for at least one hour to allow the flavors to marry.
