The Best Mediterranean Pasta Salad (with Cucumbers, Tomatoes and Feta Cheese)

Loaded with tomatoes, cucumbers and fresh herbs this Mediterranean Pasta Salad is a light and delicious summer side dish. With classic Greek flavors this simple pasta salad is easy to make and great for summer cookouts and dinner parties.

Ingredients
  

  • 16 oz dried pasta such as shells or farfalle
  • 1 large English cucumber sliced
  • 2 pints cherry tomatoes halved
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 4 oz feta cheese crumbled
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp dried oregano
  • 2 tsp kosher salt
  • 2 tsp ground black pepper

Instructions
 

  • Cook the pasta per package directions until it's al dente. Drain the pasta and rinse with cold water in order to stop the cooking.
  • Prepare the red wine vinaigrette. In a small bowl whisk together the red wine vinegar, dried oregano, salt and pepper. Slowly whisk in the olive oil until the dressing is fully incorporated.
  • In a large bowl combine the pasta, sliced cucumbers, tomatoes, parsley, mint and feta. Pour the dressing over the pasta salad and toss until fully combined.
  • You can serve the salad immediately but for the best flavor allow the pasta salad to chill in the refrigerator for at least one hour to allow the flavors to marry.
