Prosciutto Wrapped Shrimp Skewers with Pesto

When it comes to quick summer meals shrimp is one of my go-to ingredients. Quick cooking, affordable and delicious it doesn’t take much to make a great shrimp dinner really sing. Wrapped in salty prosciutto, cooked quicky over high heat and then finished with a drizzle of flavorful pesto these shrimp make for a great light dinner orappetizer. My recipe for Prosciutto Wrapped Shrimp Skewers is easy to make and comes together in 20 minutes.

Prosciutto Wrapped Shrimp Skewers with Pesto

Shrimp are a great ingreient for a quick dinner and with their mild taste are a great canvas for bold flavors (take a look at my Spanish Garlic Shrimp!). Wrapping the shrimp in prosciutto infuses them with a hit of saltiness and also crisps up a bit when cooked over high heat providing a nice contrast in texture. While you can certainly use storebought pesto, making homemade pesto is fairly simple and I usually have a batch in my fridge throughout the summer. Using sun dried tomato pesto would also be fantastic with these shrimp!

Ingredients

  • shrimp (peeled and deveined) 
  • kosher salt
  • ground black pepper
  • prosciutto 
  • pesto (homemade pesto or storebought)

How to Make Prosciutto Wrapped Shrimp Skewers

These shrimp are incredibly easy to prepare, especially if you’ve purchased your shrimp already peeled and deveined. Season your shrimp with salt and pepper and then wrap each shrimp with a small strip of prosciutto. Thread 5-6 shrimp on each skewer (I recommend these metal skewers with a flat side to preven your shrimp from spinning when you turn them).

Preheat the grill or a grill pan over medium heat. Cook the shrimp for 4-5 minutes on each side or until the shrimp are no longer transluscent. Transfer the shrimp to a plate and drizzle with pesto sauce. Serve as desired.

  • 4 skewers

Ingredients
  

  • 1 pound shrimp (peeled and deveined) about 20-24 shrimp
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 4 oz prosciutto sliced into 20-24 strips
  • 1/2 cup pesto

Instructions
 

  • Sprinkle the shrimp with salt and pepper. Wrap each shrimp with a small strip of prosciutto. Thread 5-6 shrimp on each skewer.
  • Preheat the grill or grill pan over medium heat. Cook the shrimp for 4-5 minutes on each side or until the shrimp are no longer transluscent.
  • Trasfer the shrimp to a plate and drizzle with pesto sauce. Serve as desired.
