Sweet and chewy it’s no surprise that blondies are a beloved dessert. Simple to make and even easier to eat these dessert bars get elevated with the addition of fresh summer strawberries and drizzle of strawberry glaze. These delicious Strawberry Blondies are sure to be a hit at your next get together.

What are Blondies?

Similar to brownies without the chocolate blondies are a delicious dessert bar with a strong vanilla flavor. Buttery and with rich caramel notes from brown sugar these bars are made even better with the addition of fresh strawberries and a delightful strawberry-lemon glaze.

Strawberry Blondies

Ingredients for Strawberry Blondies

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1/2 tsp kosher salt
  • 1/4 tsp baking powder
  • 1 cup sliced strawberries

For the glaze

  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 strawberry, sliced

How to Make Strawberry Blondies

Preheat the oven to 350 degrees F. Line an 8×8 baking dish with parchment and set aside. Melt the butter in a medium saucepan and transfer to a large mixing bowl. Add in the brown sugar, eggs and vanilla and whisk together. Stir in the flour, salt and baking soda until fully combined. Fold in the sliced strawberries and pour into the prepared baking dish. Bake the blondies for 30-35 minutes, or until the edges are golden and the center is set. Transfer the pan to a wire rack and allow the blondies to fully cool.

To prepare the glaze combine the powdered sugar, lemon juice and strawberries. Allow the glaze to sit for several minutes or until it has turned pink, strain out the strawberries. Drizzle the glaze over the blondies. Slice the blondies into 16 pieces (2 inch x 2 inch) and serve as desired.

    These turned out so deliciously sweet and fluffy. I baked them a little less than recommended because I have a convection oven, but alas, perfection!
