Winter is prime soup season, and if you’re anything like me you want something cozy but also healthy. Roasting cauliflower elevates this simple vegetable while a mix of golden spices transport you to the souks of Marrakech. This Spicy Roasted Cauliflower Soup is easy to make and sure to warm you on the coldest winter day.

Spicy Roasted Cauliflower Soup

This soup is far greater than the sum of it’s parts. A few simple vegetables combined with Moroccan spices produce a soup that’s healthy, filling comforting and delicious. Roasting the cauliflower results in a nutty flavor while the chickpeas help make this soup extra velvety. This soup is vegan, gluten free and keto but above all it’s delicious.

Ingredients for Spicy Roasted Cauliflower Soup

  • Olive Oil
  • Cauliflower
  • Onion
  • Carrots
  • Garlic
  • Ground Cumin
  • Ground Coriander
  • Ground Ginger
  • Ground Tumeric
  • Smoked Paprika
  • Red Pepper Flakes
  • Vegetable or Chicken Broth
  • Chickpeas
  • Lemon juice
  • Salt
  • Pepper

How to Make Spicy Roasted Cauliflower Soup

Spicy Roasted Cauliflower Soup - preparing soup

Toss cauliflower florets with 2 tbsp of olive oil and spread in a single layer on a baking sheet. Bake for 30 minutes or until tender and lightly charred. While the cauliflower is roasting heat remaining 1 tbsp of olive oil in a dutch oven over medium heat. Saute onions, garlic and carrots for 4 minutes or until and translucent. Stir in cumin, coriander, ginger, tumeric, smoked paprika and red pepper flakes and cook for 1 minute.

Add broth and chickpeas and bring to a boil, reduce heat and simmer for 10 minutes. Remove from heat and add in roasted cauliflower, lemon juice, salt and pepper. Use an immersion blender to puree soup until smooth, (Or you can puree the soup in a traditional blender in 2-3 batches, taking care when working with the hot liquid), then add inadditional salt and pepper to taste. Serve as desired.

Ingredients
  

  • 3 tbsp olive oil divided
  • 1 head cauliflower, cut into florets about 5-6 cups
  • 1 large onion, diced
  • 1 large carrot, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp ground tumeric
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 4 cups vegetable or chicken broth
  • 1 15 oz can chickpeas, drained
  • 1 tbsp lemon juice
  • 1 tsp kosher salt plus extra to taste
  • 1/2 tsp ground black pepper plus extra to taste

    I was excited to enjoy this soup on a chilly fall day in the Midwest. I followed the recipe precisely. My family and I ate it but we did not like it at all. It’s was thick and lacking in depth and flavor. It seemed to have all the ingredients for flavor but somehow failed to deliver. So sorry but this one is a hard pass for me.

      Hi Gerri thanks for catching that! You add in the lemon juice, salt and pepper after you puree the soup. The lemon juice add adds a bit of brightness and acidity to balance the flavors of the soup. I’ve fixed the recipe and included that final step.
