Mashed potatoes may just be the ultimate side dish. Equally at home with a cozy pot roast or an elegant filet mignon mashed potatoes go with just about anything. Add in a bit of garlic (because garlic makes everything better) and cook it all in the Instant Pot and this classic side dish gets even easier to make. These Instant Pot Garlic Mashed Potatoes are delicious and come together in a snap.

These may be the easiest mashed potatoes you’ll ever make, and the best part is you don’t even need to drain them! Everything happens in the Instant Pot and these mashed potatoes cook up super quick. Even the garlic is cooked in with the potatoes, and you can put as little or as much garlic in these mashed potatoes as you want ( These air fryer rosemary potatoes are another delicious potatoe dish).

What are the Best Potatoes for Mashed Potatoes?

When it comes to making mashed potatoes the kind of potato you use matters. Higher starch potatoes like Russets or Yukon Golds (which are affordable and easily found in any grocery store) result in mashed potatoes that are fluffy and creamy. Waxy potatoes (like white or red potatoes) require more mashing and are prone to becoming pasty or gummy.

Do I Need to Peel Potatoes for Mashed Potatoes?

Whether or not to peel potatoes for mashed potatoes is a personal preference. I usually leave the peels on for a more rustic mashed potato. There is also a ton of nutrition in potato skins! Potato skins are high in fiber, potassium, Vitamin C and calcium. If you’re simply not a fan or want a more refined mashed potato feel free to peel away (I’m a huge fan of this vegetable peeler).

How to Make Instant Pot Garlic Mashed Potatoes

Instant Pot Garlic Mashed Potatoes - ingredients

Place chopped potatoes, garlic and chicken broth in the Instant Pot, close the lid and ensure the pressure valve is sealed. Cook on manual pressure for 6 minutes. Perform a quick release and ensure the pressure is fully vented. Roughly mash the potatoes with a potato masher. Add in the milk, sour cream or Greek yogurt ( I rarely have sour cream on hand but always have Greek yogurt so this is what I tend to use), butter, salt and pepper and stir to combine. Serve as desired.

Ingredients
  

  • 3 pounds Yukon gold or russet potatoes chopped
  • 3-6 cloves garlic
  • 1 cup chicken broth
  • 1/4 cup milk
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp butter
  • 1/2 tsp kosher salt or to taste
  • 1/2 tsp black pepper
