No drink is more refreshing on a hot summer afternoon than a margarita. Well maybe if we make it a pineapple margarita, and if we just happen to make that pineapple margarita with mezcal? Now we’re talking. This pineapple mezcal cocktail is equal parts smoky and sweet and completely delicious and the perfect sip for for the dog days of summer. The best part is this pineapple mezcal margarita couldn’t be easier to make at home.

I’ll never forget the first time I tried mezcal. I was in Tepotzlan, Mexico staying at La Villa Bonita cooking school. I became quick friends with the owner of La Villa Bonita and one night after dinner she brought me to a underground salsa club in Tepotzlan. But this wasn’t just any salsa club, it was a passion project of a few members of the Mexico National Symphony Orchestra who came from Mexico City each weekend to play salsa music long into the night. Ana suggested I try mezcal, which came served with orange slices and chili salt. First sprinkle one of the orange slices with some chili salt and take a bit followed by a sip of mezcal. I was immediately intrigued.
What is mezcal?
Mezcal is defined as any agave based liquor, and just like bourbon is a type of whiskey tequila is a type of mezcal. Both tequila and other mezcal are made from the piña, or heart, of the agave plant. Tequila is made from blue agave, steamed and distilled several times in copper pots and can only be made in 5 regions of Mexico. Mezcal can be made from up to 30 varieties of agave and in 9 different regions of Mexico. Mezcal is cooked inside pits that are lined with lava rocks, charcoal and wood before being distilled in clay pots. This gives mezcal its smoky taste that I can’t get enough of.
How to make pineapple mezcal margaritas
These pineapple mezcal margaritas couldn’t be easier to make. Basically put your pineapple, mezcal, Cointreau and lime juice in the blender and turn it on. Blend for a minute or so, strain it if you wish (I prefer the thicker texture without straining, but you do you), pour into a salt rimmed glass and enjoy.

Pineapple Mezcal Margarita
Equipment
- Blender
Ingredients
- 2 cups pineapple chunks
- 2 oz lime juice
- 4 oz mezcal
- 2 oz Cointreau
- Margarita salt optional
Instructions
- Place pineapple, lime juice, mezcal and Cointreau in a blender. Blend at medium speed for 1 minute or until thoroughly combined.
- Rim two margarita glasses with salt if desired. Divide margarita between both glasses.
