This Pineapple Mezcal Margarita is a delicious cocktail for summer. The sweetness of fresh pineapple juice is perfectly balanced with smoky mezcal for a delicious drink that will transport you to Mexico.

Iโll never forget the first time I tried mezcal. I was in Tepotzlan, Mexico staying atย La Villa Bonita cooking school. I became quick friends with the owner of La Villa Bonita and one night after dinner she brought me to a underground salsa club in Tepotzlan. But this wasnโt just any salsa club, it was a passion project of a few members of the Mexico National Symphony Orchestra who came from Mexico City each weekend to play salsa music long into the night. Ana suggested I try mezcal, which came served with orange slices and chili salt. First sprinkle one of the orange slices with some chili salt and take a bit followed by a sip of mezcal. I was immediately intrigued. Every time I make this margarita recipe I’m transported back to Mexico.

What is mezcal?
Mezcal is defined as any agave based liquor, and just like bourbon is a type of whiskey tequila is a type of mezcal. Both tequila and other mezcal are made from the piรฑa, or heart, of the agave plant. Tequila is made from blue agave, steamed and distilled several times in copper pots and can only be made in 5 regions of Mexico. Mezcal can be made from up to 30 varieties of agave and in 9 different regions of Mexico. Mezcal is cooked inside pits that are lined with lava rocks, charcoal and wood before being distilled in clay pots. This gives mezcal its smoky flavor that I find pairs well with sweet fruits like pineapple.
Ingredients
- Pineapple juice
- Mezcal
- Cointreau (or other orange liqueur such as triple sec or Grand Marnier )
- fresh lime juice
- coarse salt
Tips
- if you don’t have mezcal you can make this margarita with your favorite tequila
- For a spicy pineapple margarita you can garnish the rim of your glass with tajin or chili powder
How to make pineapple mezcal margaritas
These pineapple mezcal margaritas couldnโt be easier to make. Add pineapple juice, mezcal, lime juice and Cointreau to and cocktail shaker with ice. Shake for 15-30 seconds or until well chilled. Pour into a glass rimmed with coarse salt and filled with ice. Garnish with fresh pineapple or a lime wedge and serve as desired.

Ingredients
- 2 oz pineapple juice
- 2 oz mezcal
- 1 oz lime juice
- 1 oz Cointreau
- Margarita salt optional
Instructions
- Add pineapple juice, mezcal, lime juice and Cointreau to and cocktail shaker with ice. Shake for 15-30 seconds or until well chilled. Pour into a glass rimmed with coarse salt and filled with ice. Garnish with fresh pineapple or a lime wedge and serve as desired.
