Skirt steak is a long thin cut from the diaphragm of the cow. Skirt steak is affordable and has loads of flavor , this is cut that’s best cooked quickly over high heat making it perfect for busy weeknights or casual weekend dinners. The grain runs across the width of the skirt steak, to serve skirt steak you want to cut against the grain.
Ingredients
For the Avocado Tomato Salad
- 2 cups cherry tomatoes sliced
- 2 large avocados diced
- 1/4 cup cilantro chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
For the skirt steak
- 1 pound skirt steak
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
How to Make Grilled Skirt Steak with Avocado Tomato Salad
Start by preparing the salad. Add the sliced cherry tomatoes, diced avocado and chopped cilantro to a bowl. Pour in the olive oil, lime juice, salt and pepper. Stirm ensuring the slad is well combined and set aside.
Preheat grill or grill pan to high heat.Pat skirt steak dry with paper towels and season well with salt and pepper on both sides. Cook skirt steak over high heat for 4-5 minutes on each side. Transfer to a cutting board and allow to rest for 5-10 minutes. Slice the skirt steak against the grain on a bias. and arrange on a platter and serve with the avocado tomato salad.
