Ingredients
  

For the Tomato Avocado Salad

  • 2 cups cherry tomatoes sliced
  • 2 large avocados diced
  • 1/4 cup cilantro chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

For the skirt steak

  • 1 pound skirt steak
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Prepare the salad. Add the sliced cherry tomatoes, diced avocado and chopped cilantro to a bowl. Pour in the olive oil, lime juice, salt and pepper. Stirm ensuring the slad is well combined and set aside.
  • Preheat grill or grill pan to high heat.Pat skirt steak dry with paper towels and season well with salt and pepper on both sides.
  • Cook skirt steak over high heat for 4-5 minutes on each side. Transfer to a cutting board and allow to rest for 5-10 minutes. Slice against the grain on a bias.
  • Arrange the sliced skirt steak on a platter and serve with the tomato avocado salad.
