Fudgey, rich and chocolatey few things are better than a homemade brownie. One of my favorite desserts these brownies get leveled up with a thick swirl of marshmallow cream. Making brownies from scratch is easier than you think and your efforts will certainly be rewarded. My recipe for Gooey Marshmallow Brownies is fairly simple and absolutely irresitable.

When it comes to brownies I am definitely team gooey and fudgey brownies all the way. Instead of using cocoa powder (which I find leads to a cakey texture) these brownies start with a mix of semisweet chocolate and butter melted together. This then gets added to a mix of sugar and eggs that have been creamed together then finally stirred together with some all purpose flour. For slightly more effort than using a boxed mix you’ve got a fudgey, chocolately brownie that tastes like it came straight from the bakery. This is my standard go-to brownie recipe (also used in my Baileys Cheesecake Brownies) but is extra delicious swirled with a thick layer of homemade marshmallow fluff (you can also you storebought if you’d like).
Ingredients for Marshmallow Brownies
- bittersweet chocolate chips
- unsalted butter
- large eggs
- sugar
- vanilla extract
- all purpose flour
- kosher salt
- marshmallow fluff
How to Make Marshmallow Brownies
Making brownies from scratch is easier than you may think. Preheat oven to 350 degrees. In a double boiler (a metal bowl set over a pan with boing water) melt chocolate and butter stirring until well mixed. Beat together the sugar and eggs with an electric hand mixer using medium-high speed in a large bowl until smooth and creamy, this will take about 3 minutes. Mix in melted chocolate, vanilla, flour and salt using the electric hand mixer on low speed until combined. A few lumps in your batter are fine.
Line an 8×8 in baking pan with parchment paper . Pour about 2/3s of the brownie mixture into the pan, smoothing it out into an even layer. Spread the marshmallow fluff over this and then top with the remaining brownie batter. Use a butterknife to create a swirl pattern. Bake the brownies for 35 minutes. Take the pan out of the oven and allow to fully cool in the baking pan on a rack. Remove brownies from the pan using the parchment paper and cut into 16 squares.
