Ingredients
  

  • 1/4 cup olive oil
  • 5-6 cloves garlic thinly sliced
  • 1 large onion diced
  • 1 tbsp fresh rosemary chopped
  • 2 15.5 oz cans cannellini beans drained
  • 1 cup vegetable or chicken broth
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 cup parmesan cheese finely grated
  • 2 cups baby spinach

Instructions
 

  • Heat the olive oil in a large skillet over medium heat, add the sliced garlic and cook for 3-4 minutes or until golden brown. Remove the garlic from the skillet and set aside, leaving at least 1 tbsp of the oil.
  • Add the diced onion and chopped rosemarry to the pan and cook for 3-4 minutes, or until the onions are transluscent. Add in the cannellini beans, broth, salt and pepper and bring to a simmer. Add in the parmesan cheese in batches, ensuring it gets fully incorporated. Stir in the baby spinach and cook until it has wilted.
  • Divide among 4 bowls (2 bowls for a larger serving) and top with the crispy garlic chips.
