This recipe for Garlic Parmesan Braised Beans and Greens is cozy, nourishing and comes together in 20 minutes. Creamy cannellini beans simmered in a simple garlic parmesan broth are a delicious meal that is healthy, affordable and easy enough to throw together on a busy weeknight using pantry ingredients.
Heat the olive oil in a large skillet over medium heat, add the sliced garlic and cook for 3-4 minutes or until golden brown. Remove the garlic from the skillet and set aside, leaving at least 1 tbsp of the oil.
Add the diced onion and chopped rosemarry to the pan and cook for 3-4 minutes, or until the onions are transluscent. Add in the cannellini beans, broth, salt and pepper and bring to a simmer. Add in the parmesan cheese in batches, ensuring it gets fully incorporated. Stir in the baby spinach and cook until it has wilted.
Divide among 4 bowls (2 bowls for a larger serving) and top with the crispy garlic chips.
