Few side dishes are as universally loved as a really good plate of simple roasted potatoes. Crisp and golden on the outside, creamy and fluffy on the inside there’s really nothing better. Unless you just happen to toss in some toasty garlic and parmesan cheese then these potatoes become swoon-worthy. These Garlic Parmesan Roasted Potatoes are delicious, simple to make and ready in 30 minutes.

Garlic Parmesan Roasted Potatoes are simple to make and done in 30 minutes and pair perfectly with a wide variety of different dishes. Here are a few of my favorite dinner recipes that would make a great main dish for these potatoes.

  • Pork Tenderloin Stuffed with Goat Cheese and Leeks

How to Make Garlic Parmesan Roasted Potatoes

Preheat the oven to 400 degrees while you prepare the potatoes. Start with baby potatoes (either red or yellow are fine) and cut them into halves or quarters depending on how big they are. Transfer the potatoes to a large mixing bowl and add the olive oil, garlic, parmesan cheese (freshly grated is best), salt and pepper and toss to make sure the potatoes are thoroughly coated.

Spread the potatoes in a single layer on a baking sheet. Place the baking sheet in the oven and bake for 25-30 minutes or until the potatoes are golden brown and delicious. Top with more parmesan if desired.

Ingredients
  

  • 1 pound baby potatoes halved or quartered
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/3 cup freshly grated parmesan
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a large bowl add potatoes, olive oil, garlic, parmesan, salt and pepper and toss to combine.
  • Transfer potatoes to baking sheet and spread into a single layer.
  • Bake for 25-30 minutes or until the potatoes are crispy and golden.
