Short ribs are the epitome of comfort food. Cooked over low heat in a rich braise spiked with dark beer until they are fall-off-the-bone tender, these short ribs are hearty and satisfying. This recipe for Beer Braised Short Ribs is savory, cozy and sure to please.

Short ribs are a cut that do best when cooked for a long time over low heat until meltingly tender and using a dark beer in the braising sauce makes them extra tasty. Guinness is a great option but you can also use your favorite stout, porter or amber ale for this recipe.
Ingredients for Beer Braised Short Ribs
- olive oil
- bone in beef short ribs
- onion
- garlic
- celery
- carrots
- tomato paste
- dark beer
- beef broth
- dried porcini mushrooms(optional)
- dijon mustard
- fresh thyme
- kosher salt
- black pepper
What to Serve with Beer Braised Short Ribs
With tender meat and an incredibly flavorful sauce these short ribs should be served with with something that will soak up every last delicious drop. Mashed potatoes are a personal favorite (like my Instant Pot Garlic Mashed Potatoes) as is creamy polenta ( take a look at my Simple Italian Polenta and my Pumpkin Polenta with Sage). Egg noodles would be another tasty option.
How to Make Beer Braised Short Ribs
While these short ribs need a long time in the oven the preparation is actually quite simple. Short ribs become fall off the bone tender when braised at a low temperature in a dutch oven (this dutch oven is indispensable in my kitchen). Generously season the short ribs with salt and pepper and brown the short ribs on each side in the dutch oven with a bit of olive oil. Once the short ribs have browned remove them from the dutch oven. Add the onion, garlic, celery and carrots to the dutch oven and cook for 4-5 minutes. Stir in the tomato paste and cook for an additional minute.
Return the short ribs to the pan and add in the beer, beef stock, dijon mustard, dried mushrooms and thyme. Bring to a simmer. Place the lid on the dutch oven and transfer to the over. In a preheated oven bake the short ribs for 2.5 hours or until the meat is tender. Add salt and pepper to taste and serve as desired.

Beer Braised Short Ribs
Equipment
- 1 5 quart dutch oven
Ingredients
- 1 tbsp olive oil
- 3 pounds bone in beef short ribs
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 2 large carrots, peeled and sliced
- 2 tbsp tomato paste
- 2 cups dark beer
- 2 cups beef broth
- 2 tbsp dried porcini mushrooms
- 1 tbsp dijon mustard
- 2 sprigs fresh thyme
- kosher salt, to taste
- black pepper, to taste
Instructions
- Preheat the oven to 350 degrees.
