Sometimes a delicious side dish is all it takes to elevate a dinner from good to great. Take the humble unassuming parsnip. When paired with a simple honey glaze and roasted until sweet and caramelized these parsnips show that vegetables are sometimes the best part of the meal. My Honey Roasted Parsnips are easy to make and are a delicious side dish for any dinner.

Parsnips are a hearty winter root vegetable related to carrots and parsley. With an appearance similar to a blonde carrot (take a look at my Maple Roasted Carrots), parsnips have a sweet nutty flavor. A tasty and versatile vegetable parsnips can be served roasted, mashed, soup, as a puree or even used in desserts like cakes or cookies.

Ingredients

  • Parsnips
  • Honey
  • Olive oil
  • Fresh thyme
  • Kosher salt
  • Ground black pepper
  • Garlic powder

How to Make Honey Roasted Parsnips

With just a few ingredients these parsnips are a delicious side dish that’s easy to make. Preheat the oven to 400 โ„‰. Peel the parsnips and cut off the root end and the tip. Cut into quarters lengthwise and place on a baking sheet lined with a silicon baking mat or parchment paper. Whisk together 2 tbsp of honey with the olive oil, thyme, salt, pepper and garlic powder. Drizzle over the parsnips and toss to ensure the parsnips are well coated.

Bake the parsnips for 20 minutes. Drizzle the remaining 1/2 tbsp honey over the parsnips and bake for an additional 10-15 minutes or until the parsnips are golden and carameized. Serve as desired.

What to Serve with Roasted Parsnips

These parsnips are a great side dish for a number of delicious dinners.Serve these roasted parsnips alongside Maple Mustard Salmon, Baked Apricot Chicken, Garlic Herb Lamb Chops or Creamy Pork Tenderloin with Mushrooms. These parsnips would also make a delicious addition to your Thanksgiving menu.
