With just a few ingredients these Honey Roasted Parsnips are an easy and delicious vegetable side dish. Dressed with a simple honey glaze and roasted until caramelized are a great sweet and savory side dish.
Peel the parsnips and cut off the root end and the tip. Cut into quarters lengthwise and place on a baking sheet lined with a silicon baking mat or parchment paper.
Whisk together 2 tbsp of honey with the olive oil, thyme, salt, pepper and garlic powder. Drizzle over the parsnips and toss to ensure the parsnips are well coated.
Bake the parsnips for 20 minutes. Drizzle the remaining 1/2 tbsp honey over the parsnips and bake for an additional 10-15 minutes or until the parsnips are golden and carameized. Serve as desired.
