Italy has mastered the art of simple cocktails and none are more famous than the bellini. A refreshing combination of peach puree and bubbly prosecco this iconic cocktail is perfect for brunch or a late afternoon apertif. This recipe for Fresh Peach Bellini is sure to transport you to the canals of Venice.

Originating in Venice, Italy bellinis are an Italian cocktail consisting of white peach puree and prosecco. Created in 1948 by Giuseppe Cipriani in Venice’s storied Harry’s Bar the beautiful blush color of the cocktail reminded Cipriani of the paintings of 15th century artist Giovani Bellini which led to the drink’s name. Alongside other simple Italian sips like the limoncello spritz and the hugo spritz the bellini has become an iconic cocktail.

Ingredients for Peach Bellini

For the fresh peach puree

  • fresh peaches 
  • lemon juice
  • water

For Bellini

  • fresh peach puree
  • Prosecco

Tips for Making a Great Bellini

  • Ensure your peach puree and prosecco are well chilled before assembling your bellinis.
  • Bellinis are traditionally made with white peaches which are sweet, floral and give the cocktails a beautiful blush color. If you can’t find white peaches feel free to use good yellow peaches in season or frozen peaches (you will not need to blanch frozen peaches) that have been thawed.
  • Open the prosecco and allow it to rest for 10-15 minutes before assembling your bellinis. This will reduce excess bubbles while still having plenty of fizz.

How to Make Fresh Peach Bellini

To make bellinis start by making fresh peach puree. Peel peaches start by scoring the skin once around each peach. Place the peaches in a pot of boiling water for 30 seconds. Transfer to peaches to an ice bath and allow to cool for at least 2-3 minutes. Remove the peaches from the water and the peel off the skins. Add the peaches, lemon juice and water to a food processor and blend until smooth. Chill the puree until you’re ready to prepare the cocktails.

For a single bellini add 2 oz of prosecco and 2 oz peach puree to a champagne glass and stir until combined. Top with remaining prosecco. For a pitcher add 1 cup of the peach puree and half a bottle of chilled prosecco, stir to combine and then pour in the rest of the prosecco.

Ingredients
  

For the fresh peach puree

  • 1 pound fresh peaches 2-3 large peaches
  • 1 tsp lemon juice
  • 1/3 cup water

For 1 Bellini

  • 2 oz fresh peach puree
  • 6 oz Prosecco

For a pitcher of Bellinis

  • 1 cup peach puree
  • 1 750 ml bottle Prosecco

Instructions
 

To prepare the peach puree

  • To easily peel peaches start by scoring the skin once around each peach. Place the peaches in a pot of boiling water for 30 seconds. Transfer to peaches to an ice bath and allow to cool for at least 2-3 minutes. Remove the peaches from the water and the skins should easily slip off.
  • Add the peaches, lemon juice and water to a food processor and blend until smooth. Chill the puree until you're ready to prepare the cocktails.

To prepare the bellini

  • For a single bellini add 2 oz of prosecco and 2 oz peach puree to a champagne glass and stir until combined. Top with remaining prosecco.
  • For a pitcher add 1 cup peach puree and half a bottle of chilled prosecco, stir to combine. Top with remaining prosecco.
