What is Delicata Squash?
Delicata squash ( also known as peanut squash, sweet potato squash or Bohemian squash) is a small winter squash thatโs similar to acorn squash but easier to eat. Delicata squash has an edible skin that doesnโt need to be peeled making preparation very easy. Delicata is creamy and incredibly sweet and requires little more than a little olive oil, salt and pepper to really shine. Delicious on itโs own delicata is also a great addition to any fall salad ( like my Kale and Apple Salad or Fennel and Apple Salad.

- Delicata Squash
- Olive oil
- Kosher salt
- Black pepper
Variations and Cooking Tips
- For a Mexican flare stir together 1/2 teaspoon each of smoked paprika and cumin along with the salt and pepper and then toss your squash rings with the spices
- For a sweeter version stir together ย 1/2 teaspoon of cinnamon and nutmeg with salt and pepper to coat the squash rings before baking
- Drizzle the cookied squash with maple syrup after baking for a side that almost tastes like dessert
How to Make Roasted Delicata Squash



To prepare delicata squash start by cutting off the stem and root ends (I recommend having a good quality knife like this chef’s knife) and then cutting the squash in half lengthwise. Remove the seeds using a spoon or an ice cream scoop, then slice into half moons roughly 1-1.5 inches wide.
Preheat the oven to 375 degrees. Place the squash rings on baking sheet , toss with olive oil then sprinkle with kosher salt and black pepper. Bake for 30-35 minutes or until the squash rings are soft and slightly golden. Serve as desired.

- 1 Baking Sheet
- 1 large chef's knife
Ingredients
- 2 medium delicata squash
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt or to taste
- 1/2 teaspoon black pepper or to taste
Instructions
- Preheat oven to 375 degrees.
