  • 1 large chef's knife

Ingredients
  

  • 2 medium delicata squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt or to taste
  • 1/2 teaspoon black pepper or to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into half moons about 1-1.5 inches wide.
  • Place the delicata squash slices on a baking sheet, toss with olive oil then sprinkle each side with salt and pepper.
  • Bake for 30-35 minutes or until soft and slightly golden. Serve as desired.
